Frénie, founder of Bayard Royal™ and creator of gourmet memories
Bayard Royal™ originated in the kitchen of my grandmother Elza Bayard. We are then in Gonaives in Haiti in the family home, in the countryside, where eggs and flour are never lacking.
With her, I learned about pastry and learned the importance of the choice of ingredients in the search for quality. I discover the art of making delicious cakes and she teaches me the secret of the dough. His specialty: pour a cap of rum into the mixture to enhance the taste and awaken the taste buds.
The balance of flavors, constant to which she never departs, impregnates me. I thrive in this universe where passion and creativity go hand in hand. I then nurture this love for the artisanal production of cakes with an authentic taste; comforting rum-infused desserts that lend themselves to any occasion. Rum is the traditional ingredient found at all West Indian tables.
In 2015, I realized my dream of creating my pastry business with the launch of Bayard Gateaux where I mainly make cakes for large celebrations. Then, during the summer of 2020, a couple of friends offered me a vacuum-packed cake soaked in rum syrup, straight from the United States. The idea of creating a pastry that can travel was born in me. So begins a new adventure with Bayard Royal ™ where I stage my flagship product - the rum cake, a creation to pay tribute to my grandmother, my culture and the love of homemade.

Without frills, our cakes celebrate the art of simplicity and bring a touch of magic to your celebrations. The West Indian rum cake is a holiday must-have on its own. To achieve perfection, we do not use fermented molasses with an overly strong taste. Our secret lies in the preparation of the paste mixed with agricultural rum, distilled directly from freshly squeezed sugar cane juice.
We are proud to offer you products made with 100% natural ingredients. With spirits as a natural preservative and vacuum packaging, our products can travel beyond Montreal borders and be distributed throughout the province of Quebec and Toronto. They thus retain their taste and freshness.
